Moo Shu Pork

1 1/2 pounds boneless pork loin chops cut into thin strips
Salt and ground black pepper
2 bottles (8.5 ounces each) hoisin sauce
3 Tablespoons soy sauce
4 scallions (green onions) chopped
2 bags (16 ounces each) cole slaw mix
Warmed taco-size tortillas or hot cooked rice (optional)

Sprinkle chops with salt and pepper, cut into strips.
In a 5 qt slow cooker, stir together pork, hoisin sauce, and soy sauce until thoroughly combined.
Cover and cook on high heat setting for 1 1/2 hours.
Stir scallions and cole slaw into slow cooker until well combined. Cover and cook for another 1 1/2 hours on LOW.
Serve with tortillas or rice.

~This makes about 6- 1cup servings. Each 1 cup of Moo Shu is about 280 calories.
I had one with a whole wheat tortilla- 1/2 cup of Moo Shu = 240 calories
So you could have the one cup serving size and two wheat tortillas for 480 calories!
And it is sooooo good!!

~ Recipe can easily be halved-this makes a lot.
