Lime Cheesecake

200 g gingernut biscuits,crushed
50 g butter,melted
500 g full or medium-fat soft cheese
4 large eggs
200 g caster sugar
finely grated zest and juice of 4 limes
fruit of your choice and whipped cream to serve
Grated lime zest to decorate.
1.preheat oven to 160C,325F,Gas 3.Mix the biscuits and butter together and press firmly into a tin.Plce the tin on a baking tray and cook for 10 minutes.
2.Meanwhile,beat the cheese,eggs and sugar until smooth,then beat in the lime zest and juice.Pour the mixture on top of the base and cook for 1 hour until the mixture is well cooked but still wobbly in the centre.
3.Switch off the oven but leave the cheesecake inside to cool for 2 hours,then chill.Carefully remove the cheesecake from the tin.Serve with your fruit i like strawberrys yum yum ,whipped cream and grated lime zest.

Since i started making this cheese cake i have never bought one since it is lush well worth a try you won't regret it andrea.

How many cheesecakes have you made? I probably eat a slice of cheesecake once every couple of years... It is great though...

I never been tried to make a cake..
Maybe now i will try for the very first time..
