So what would be a good conversion rate for an affiliate? Were talking commissions here.

Depends on the product, but 1-2 % should be good

Don't ever assume more than 1%, meaning 1 sale for every 100 visitors. Please note, however, that some products convert at FAR LESS than 1:100 - maybe even 1:500. Ultimately, its all about testing, testing, and more testing.
